Blueberry Tartlet

Want a quick and easy dessert (this is actually a solid breakfast as well)?  This one will satisfy the sweet tooth and only will take you about 10 minutes to make!


  • 2 tbsp almond butter
  • 2 tbsp sugar
  • 1 tbsp softened butter
  • 1 egg yolk
  • 1/8 tsp almond extract
  • 4-6 slices sandwich bread (white bread is best)
  • Berries of choice (I used blueberry)
  • Confectioner’s sugar
  • Whipped cream

Preheat oven to 400 degrees Fahrenheit.

Whisk together the almond butter, sugar, butter, egg yolk, and almond extract.  Lay foil down over a baking sheet and coat with cooking spray. Spread the mixture over the slices of bread and place on the tray (mixture side up).  Place the tray into the pre-heated oven until the bread has toasted (about 6-10 minutes).

Top the tartlets with the berries.  Put some confectioners sugar in a metal sieve. Dust the tartlets by tapping the sieve over them. Top off with a dollop of whipped cream and serve.
